Enchilada Casserole

Welcome to the August BONUS installment of Secret Recipe Club!!!  Today all posts are focused on “back-to-school” and family friendly dishes which are basically all my family eats these days cuz 9 month old.  For this special feature, I was assigned Sid’s Sea Palm Cooking which is PACKED with amazing recipes including caramelized potatoes which I made before.   Had this been a normal challenge I would have made her Vandbakkelser because OMGoodness does that look amazing!   However, playing by the rules is good so I went with her enchilada casserole.  She actually has two of them on her page so I went with a hodge-podge version of both!  Instead of chicken, went with all beans per the suggestion of one recipe and upped the spice while reducing the sauce as per the second recipe.  (apologizing for any typos in this post as my computer has decided it doesn’t “like” certain letters right now)

Only thing I might do differently in the future is add some chips to the top to give it a bit of a crunch.  This came together super quickly and also tasted amazing as lunch the next day – always a nice bonus!

Sweet Summer

Welcome to March’s Secret Recipe Club!  It feels so awesome to be joining the SRC again after taking my baby break – I missed the fun that comes with being sent a blog to explore.  This month I was given Sid’s Sea Palm Cooking, a blog I was very familiar with thanks to Facebook and previous SRC reveals.  I had a very hard time picking a recipe this month as Sid’s blog is stuffed to the gills with all sorts of recipes including retro favorites and Danish treats.  Two of the “finalists” were part of the Danish block: Baked Omelette and Cauliflower with Herbs.  In the end I could not get past her Chicken Acapulco recipe and decided that I had to give it a whirl.  I replaced the chicken with extra firm tofu and since I was unable to find the McCormick meat seasoning in the original recipe I made my own.

Fantastic!  The spices and the cheese went together perfectly and by giving the tofu enough time to drain it was really able to soak up all the flavors.  We enjoyed ours taco style for dinner and as a burrito bowl the next day with some Spanish style rice – adding some fresh avocado and green pepper each time.  I had never heard of acapulco chicken (or tofu!) before finding this recipe but now it will be on regular rotation.  It might require a number of bowls but it comes together super quick.  For a real short cut, pick up some fresh made pico de gallo at the grocery store.  Another great recipe thanks to the Secret Recipe Club!!!

Welcome to my BONUS Secret Recipe Club post for November!  When I saw that there were two orphans from last week, I jumped as quickly as possible.  I wound up being greatly rewarded as I got Leslie’s La Cocina de Leslie’s blog, which I had once before, one that I had marked around a dozen recipes to try.  So rather than narrow it down to one pick, I went with a full meal – including a prep recipe.  For the main course we enjoyed her Entomatadas (Tomato Enchiladas) while her pinto refried beans were the perfect companion – especially after using her precooking technique to make sure they were ready to go.   I did have to swap out the cheese in her tomato enchiladas as my local grocery store did not have queso fresco – reminding me why I drive to the county every weekend to go to Wegmans! Thankfully Google let me know that I could use plain feta so Google to the rescue!!!!

Pinto Refried Beans

La Cocina de Leslie’s blog has so many delicious treats that settling with just three recipes still had me wanting more.  So with that two of her other recipes, 3 Bean Chili and Austin Black Beans, were converted to freezer meals and are currently in my freezer waiting to be enjoyed once baby arrives!  I might have gone a bit overboard but everything looked so amazing – I just couldn’t decide!

Orioles Magic

Welcome to a special August edition of the Secret Recipe Club!  A few months ago it was decided that instead of the 5th Monday of the month being a “buy” week, it would be a time for all four groups to get together around a common theme.  The first theme: Tailgating!  While we’re not really tailgators in this house, we are huge fans of chips and dips and all those other delicious finger foods – we just tend to serve them during (board)Game Days.  This year we did treat ourselves with (partial) season tickets for the Orioles, so have had a few more opportunities to indulge in tailgate treats while at the game.  For this special feature, I was sent to check out Micha’s Cooking Mimi blog which has a bunch of delicious treats.  In fact, the recipe I settled on in the end is really a 2 for 1 as for the perfect Nopal dip you have to first make her Pico de Gallo salsa.   I had to make one change to each recipe, dropping the lime juice from the salsa (allergy) and subbing some black beans in for the ground beef in the Nopal dip.  I’m sure a beef substitute would work, and that had been my original plan, but I’ve had a hard time finding my favorite one lately – which of course is store brand so limited in options.  Anyway – this dip came together super fast and was delicious!

We enjoyed it with chips (of course) and some burrito bowls for a perfect Mexicanish dinner.   The salsa had the right amount of bite thanks to the two jalapenos which is always an issue for us as many are a bit too mild.  I did notice my salsa came out a bit thicker than Micha’s but not exactly sure why.

Grilled Fajita Bowl

Today’s post is one of my all time favorite summer recipes – with a chipotle twist thanks to T. Lish dressings and marinades.  I’ve always been a fan of fajitas, regardless of the vegetables involved I know that as long as the vegetables are fresh the dish will be amazing!  I had originally planned on doing more traditional fajitas (tortillas, homemade salsa, etc) but given the current state of things I knew that I needed to adapt the recipe in order to fit with my new lifestyle.  So I made up some yellow rice and sliced up some avocado to make a delicious fajita bowl – all the flavor with a fraction of the prep time as everything just goes in the bowl.

Southwestern Shepherd’s Pie

Welcome to May’s installment of the Secret Recipe Club  and what I hope is the start of a lot of new blog posts.  I wound up taking the last month off in order to deal with our kitchen renovation and a fantastic little stomach bug.  Now I’m back – with an awesome new kitchen that can’t wait to be used!  Today’s recipes is one of the first I did in the new kitchen, and was a great way to “break it in” since it required the stovetop as well as the oven.  The interesting part is that the recipe I wound up using from BCmom’s kitchen was not one on my original list.  My first plan was to make her delicious sounding Sweet Potato and Chickpea soup but then the weather decided to warm up, so I needed a new plan.  It was in my second search that I saw her Southwestern Shepherd’s Pie.   I had to make a few changes in order to make it vegetarian, essentially dropping the meat and doubling the vegetables!

There are more ingredients, and steps, to this than most of my recipes but it still comes together rather quickly.  I served this with some avocado,  a dollop of sour cream, and some tortilla chips in order to ensure every last drop was enjoyed.  Another fantastic dish thanks to the SRC!

When I first saw the call for bloggers to help with a Man Men Party to kick off the last season of the series- I was very interested but a bit perplexed.  When I picture meals in the 1960s, many menus and ideas come to mind and not one of them is vegetarian.  So I inquired and was thrilled to find out that this fantastic ode to the food of featured in Mad Men included a more than a few vegetarian recipes – in addition to classic drinks and fantastic treats.   I was so excited to open up my copy and get to work deciding on a recipe, narrowing it down to a whopping 5 dishes that begged to be enjoyed.  However with my inpending kitchen renovation, I knew that whatever I picked had to be quick and easy and low mess – so hello Chili Rellenos!  I’ve had Chili Rellenos before but always fried, so the fact that these are sauted made them even better – plus no breading so a great gluten free treat as well.  I had a bit of an issue with the technique, however for these delicious treats looks don’t matter – it’s all about the taste!  I also turned it in to a one pot dish but heating up the sauce at the very end while the peppers cooled a bit – this also allowed me to get all of the cheesy and eggy goodness out of the pan.

Since I was serving these to my in-laws, I did a mixture of poblano chilis and standard green bell peppers – same technique just a less spicy pepper.  I served the sauce in a bowl on the side, and let people add as much (or as little) to their peppers as they wanted.  To take it from an appetizer to a true entree, I added some black beans and rice for the perfect meal. I am so beyond happy that I decided to join in the fun – and can’t wait to try out more recipes (Sour Cream Coffee Cake!) and even try my hand at bartending.
