Mixed Berry Cobbler
The heat wave seems to have broken for now, so I’m getting in as much baking as possible before it comes back. I haven’t been able to go fruit picking this year but luckily the farmers market have been packed with all sorts of amazing berries. I decided to grab some late strawberries and blueberries along with the first of the blackberries. I reserved some of the blueberries for a tart, recipe later this week, and dedicated the rest of them to this cobbler. My mom made this tart earlier this summer for a family get together, but it was a little too sweet for my taste. She gave me a copy of the recipe and I decided to rework it in an attempt to cute the sweet and enhance the berries. The result was perfect and I can’t wait to try it out with other types fruits, such as the sour cherries I saw last week!
Nothing like a simple cobbler to get in the summer mode, all it needs is some fresh ice cream. I still haven’t been able to make my own ice cream, but I’m hopeful that one day it will happen! I have so many ideas for different flavors, I just have to find a technique that works for me.
The garden is still well, my squash is really starting to take over the space so I might have to start cutting it back. My black beauty eggplant is starting to show signs of life while my Japanese eggplant is still doing fantastic. The tomatoes are also doing well, but I’m hoping they will take off here shortly. It’s been amazing going out to the garden and picking what I need for dinner, plus it’s allowing me to splurge on berries and other fruits!
